Like several other human organs that come in pairs (say, kidneys, lungs, etc.), you only need one functioning ovary and the other is really just a "spare". There is no truth to the myth that you'll only ovulate bimonthly, because there's no evidence that the two ovaries "alternate". Hormone levels and such should not change; your remaining ovary will compensate (likely by slight enlargement) for the loss of its partner.
