I know it has to due with urinary track health but what does it do...
Answers:
During sex, sometimes bacteria can be pushed or rubbed into the urinary tract. Peeing right after will flush that bacteria out. Most women get UTI's from having frequent sex or not peeing afterwards. You have about 30 minutes to pee after sex for it to be effective and to avoid UTI's.
Basically it just "pushes out" anything that may have gotten into the urethra and the surrounding area during sex. It cleans it out and lessens the chance of bacteria growing from foreign substances.
Sometimes I want to pee during sex, so pee before sex, and then you won't need to pee after.

Uh, I didn't know that it was "important" for women to pee after sex. Guess I've been doing it wrong all these years!
Sex can be very messy. A women needs to urinate everytime after sex to plush out the possible bacteria that the sex may have caused or will cause. If not, yes you will develope a urinary track infection and if left untreated, may lead to kidney infection and kidney failure.

Women are told that they should try to pee because during sex many fluids such as sperm or a womans natural lubricant sometimes gets in to the urinary tract. If left their it can cause a urine infection which is very uncomfortable. By urinating your making sure that anything that may have gotten in the urniary tract is expellled and therefore you can avoid an infection. Hope that answers your question

and if you don't pee after sex is not a guarantee that you will get one, it's just that peeing lowers your chances
It's important so that you don't get a UTI. During sex, it's very easy for bacteria to enter into you vagina and spread to your urehtra, so it's better that you urinate afterwards to prevent the bacteria from going further up through your urinary tract and bladder, thus preventing a urinary tract infection.
