Cat scratch fever will make the hand swell up, infection makes the wound look ugly and can cause red streaks up the arm. If you have either of these, you need the emergency room, NOW.
If none of the above, I suspect what happened to you was the salt got into the new scratch and that is causing the pain. Flush the wound in cool water for several minutes to get rig of the salt and the pain should go away.

It probably didn't have anything to do with handling the raw foods. Keep it clean and dry and apply a antibiotic cream. In a few days it will start to heal up.
It will be red, swell and be hot (well, warm really) to the touch. Also you will have white blood cells (pus) coming out of it after a day or so. It shouldn't be a big deal unless you start to be in a LOT of pain.

Sometimes infection involves fever, but not always.Wash it with soap and water and use an over the counter antibiotic ointment twice a day. Infections come in all shapes and sizes. I guess the most common one is when it gets all red and it starts to hurt like Hell. My guess is that it is infected and another guess it that the raw meat, pepper, salt, and other stuff is what helped it. My suggestion is that you get an appointment to go see a doctor is it gets red and the pain continues.
