What is an allergic reaction to dogs and cats?

Any allergy is a reaction from the body due to its inabilty to process the thing that it's allergic to.
More specifically, I know in cats, people are allergic to the dried saliva on a cat's fur (not the hair itself).
The body basically decides that the saliva is a bad thing, and removes it from the body, or gets sick from it.
