Why is the brain gray?

If you looked at a slice of brain, you would see two colors. The outer part or the Cortex is gray matter, and deeper the brain is white matter. It has to do with the anatomy of a neuron. A neuron is a cell that has 2 major parts, the cell body and the long projection called the axon. The axon is white in color in the brain because it is coated with a fatty material called myelin, if the axon were not coated it would be a gray color. The cell body is not coated with myelin so its color looks gray. The cell bodies of the brain is what makes up the outer layer or the cortex, hence the gray color. Deep to the cortex are the axons and this imparts a white color. If you looked at a slice of spinal cord, the inner part of the cord is gray and the outer part is white.
