When your bowels are being mixed via haustration a certain amount of bacteria are mixed in. The longer the bacteria have to "breath" and digest the more air you will have in your bowel. Suffice it to say that the "floaties" have more digesting bacteria and fiber while the "sinkies" have less of both.
Why does it really matter?
I believe that is due to a higher fiber content in some portions. Fiber can make poop float!

I think because they still have some air. When the water fill all the really small air spaces it will eventually sink. When I was in highschool a classmate ask this question to the teacher and she gave this type of answer.

Some of the things you ate weigh more than others. Besides, it all separates inside you...constantly turing inside out and over and over again as its pushed down the canals. There are two parts to milk- the milk and its fat. The milk fat rises to the top...why? Because its lighter. You have heavy and light parts to your poop.
it has to deal with density and the air pockets in the turds. if the turd is lighter and smaller, then generally it will float because it is less dense than the toilet water. if something is less dense than the water, then it will float
If poop has a lot of fat in it or if it contains a lot of gas (which can happen if you digest something quickly), it will float. Also, if you don't eat a lot of "heavy" food (like meat or bread), your poop is more likely to float (this is why vegetarians often report having a lot more floating poop than people who eat meat) because it doesn't contain the ingredients that make most poop sink. As for having some that floats and some that sinks- this is most likely to be caused by the poop containing a lot of fat or gas that is not evenly dispersed.
