Priests are referred to as "Father." You could say "Hello Father ________," or just call him Father (or you could just say Hello).
If you are comfortable enough with him, just ask him what he wants to be called. The same goes for saying goodbye to him.
As far as what he will say, it depends on the priest.
hello father, goodbye father. he says cheers mate. its only a priest not the pope treat him the same as any other human. a bishop or higher then one should use proper protocol. bishop is "your grace" cardinal "your eminence" the pope "holy father"
If you want to you could address him as Father, but if you are not Catholic you could call him by his name but if he's old school it might raise a few eyebrows. Remember he's a person who deals daily with people of many faiths. Don't worry, he's not the pope.
It does depend a little on the situation but speak to him like you would anyone else unless you have a potty mouth:)

My catholic priest is quite humourous,and so are many others too,he even makes jokes about his favourite football team in his services,really nice man too,makes me feel very at ease.
I once told him I'm not really a true practising catholic cos I dont go to church every sunday,his reply was "Going to church every sunday isnt the be all and end all,you can talk to God wherever you are".
Try not to worry and analise everything,just be yourself,he/she wont bite you know,they are as human as the rest of us.
