Can u deny any service that the E.R. wants to provide you with or do you have to let them do what they want?

You can refuse treatment--absolutely. Even life-saving treatment. You can sign a "do not resuscitate order", so like if your heart stops, they won't do CPR.
They will make you sign a form stating that you are refusing medical treatment AGAINST ADVICE and it will be signed by the doctor and the nurses. That way, if you go home and get VERY ill (or die) no one can sue the hospital--you didn't want treatment.
what services are provided by the ER are up to you. However the doctor may ask you to sign a statement stating you refused "Against Medical Advise" because he thinks it is for your best interest and that way he cannot be held liable if something happens to you later.
If you are concious and in no big threat of dying, you sign a contract stating it is ok to preform this medical procedure, if you dont sign it that means you dont agree to the terms there for reject his help, you can deny any ER service. You have to speak with your doctor about the best treatment for you, after all this their job.
If you are unconcious or unable to make that decision yourself, the ER team will try their very best to save you in a life-threating situation.

Normally when you arrive you have to sign a waiver stating you will allow medical treatment, so they can do whatever it takes to diagnose you, but you have to go along with the treatment plan...Good Luck
