While brand is somewhat important, what you want is something over 70% cacao. The problem with this high a concentration is that is almost does not taste like what you would expect - it is quite bitter. There are several brands. I personally prefer Scharffenberger - but Valrona is good and even Hershey is getting into the high-end business and their product is pretty good.
Probably one of the super-premium brands such as Amadei or Valrohnna, the well known brands are too diluted and commercialized.
I am sorry to say, there is NO flavonoids in chocolate,
They are not added to the formula as far as I know.
Flavonoids (called favonoids because of the color ) are yellow fluorescent substances, that are contained in lemons, lime, oranges, pears, etc, are properly called BIO flavbonoids because they are found in living fruits ( living vegetables that sinthesize them)..I suggest, that if you are looking for flavonoids, you would consume more lemons, fresh strawberries (not jellies) fresh peaches, carrots etc---
You will have lots of them, chocolate does not, in any way contain them..
