Why do you think our bodies do things that the mind doesn't need to process?

It's not -instinct-. Sometimes it's called 'muscle memory'. You really notice it when playing a musical instrument, or touch-typing. If someone asks me 'Where is the q on the keyboard' I can't just -picture- it, I have to put my hands out in front of me and reach for the 'q'.
Of course it's your brain that does this. Through repetition you have made connections in your brain that make it like playing a tape, so easy that it seems nearly automatic. If you wanted to show someone how to tie a shoe you'd have to deliberately slow down and observe what you yourself are doing, because otherwise it's so automatic that you don't even see how you do it.
The mind is never "completely unaware" of our actions. The "concious" mind may be focused elsewhere.
Just because you're not thinking about it doesn't mean your mind isn't processing it. Everything you do, your mind is involved , every movement you make...everything.
Its called instinct.
Other people call it physical intelligence.
Its when you do the same task for long time. After that, the body learns how to do the task with out asking the mind.

Your mind does think everything out, but it your subconscious that does it. Once you have learned something your body and mind collaborate so fast you don't even know it happens. it's like sleeping. You do not have to tell yourself to sleep or to breath when you sleep. theses are involuntary actions that your brain already knows but is controlled by your subconscious.
Your conscious is considered something that you have to think about. Like I have to think of what I am going to write to you(conscious), but I do not need to look at the keyboard to write it (subconscious) because my mind has already learned it.
Our minds process everything.
Our minds have both conscious and unconscious processes.
Habits, like tying your shoelace, tend to become unconscious the more you do them.
Be proud of yourself for asking that question. It shows that you are intelligent and curious.
