An orthopedic doctor could tell you for certain, but it sounds a lot like trigger finger. I have had surgery done on three of my fingers for this. The tendon in our fingers slides through a casing when we bend and straiten our joints. With trigger finger the tendon is swollen or the casing is too tight for the tendon to smoothly slide. This causes a catching and often a hard pop to occur when opening the finger. It is not a difficult thing to fix and it effects a lot of people. I hope this gives you some place to start!

wear splints for a couple of nights. see if it works
you are double jointed and it is from the way that you sleep. you just get really comfy in a position that puts pressure on your thumbs. and yes, it does make a loud popping noise, but much like cracking your knuckles, the sound is made by the nitrogen in you blood popping. completely normal but a little gross. at least is you understand the reason, its acceptable. for those against cracking knuckles, you aren't hurting your joints just re leaving pressure
