Dairy is the culprit! You can find lots of Scientific research about the link between Cow's milk Arthritis. The protein when metabolized causes acid in the system. And believe it or not, dairy actually robs you of calcium to neutralize the acidity in the body. You could probably find something on www.notmilk.com or www.milksucks.com. Remove Dairy from the diet. That includes anything that contains casein, lactose, skimmed milk, whey, milk solids and milk protein. Take flax seed oil cold (do not cook with it) and only use extra virgin olive oil during cooking.
