Is luncheon meat and the meat from the deli both processed?

Yeah - they are both the same thing. Some meat is more "processed" than others. Turkey breast, for example, is usually injected with spices and broth, but is otherwise just meat. Bologna, on the other hand, is a collection of spices, fillers, meat, and meat "by products" (think snouts) all ground up and formed into a cylinder.

Most luncheon/deli meats have a lot of sodium and some preservatives. If you really don't want these thigns, bake an organic turkey breast yourself or grill some chicken and use that for sandwiches. It tastes better, has lower sodium, and is probably better for you.
