Anodizing is when a metal is dipped in certain chemicals and it causes a chemical change in the actual metal. Teflon is a coating that is adhered to metal that can withstand high heats. As mentioned above, it can eventually flake off and get in your food, so the anodized cookware is most likely safer than the Teflon coated cookware.

Teflon is used on cheaper cookware, it'll definitely flake after some time and you're no longer non-stock--amount of time varies, could be a week, up to maybe a year if perfectly taken care of and seldom used. Hard anodized is much better, however, quality can vary among brands. I've had some Farberware for almost 2 years that's still nearly perfect and used several times a week. I have Calphalon Commercial Hard-Anodized 12-Inch Everyday Pan with Lid that we liked really well, but it really lost some non-stickiness the by the 2nd month. The Calphalon should be better than the Farberware (price is definitely higher) and I bought it because Calpholon is supposed to be good. Maybe we just got a bad one?

I don't recommend Teflon to anyone. If you are going to use this you have to start your burner on low and gradually increase the heat. It also flakes off when you are cooking and can get in your food after time. The Anodized is much better. I have had a set of these for the last seven years. Mine have a life time warranty!
