There are certain enzymes in raw (live) food that begin to break down when cooked above about 160F. Eating raw preserves these enzymes for your body to use. Also, many fats (such as flaxseed oil) will go rancid when cooked. Actually, all will at a high enough temperature. The rancidity destroys their good essential fatty acids and makes them bad to eat.

Also, many raw foodists are also vegan, and many may do it for environmental reasons. They'll generally try to buy only organic, locally grown foods.
