Although oils and fats often receive negative publicity and at times are a significant factor in one or more serious diseases, they are not all harmful. In fact, oils and fats are basic elements of the human food supply.

New analysis by Technical Insights, a division of the international strategic market consulting group Frost & Sullivan, "Edible Oils and Fats in Western European, North American, and Asian Markets" reveals the value of the technologies and markets driving growth in the use of these critical energy suppliers to the human diet.

Fats are important suppliers of energy in the diet. A gram of fat provides more than twice the amount of metabolic energy provided by the other main components of food, proteins and carbohydrates.

"Fats supply the essential fatty acids, linoleic and a-linolenic, which the body is unable to synthesise," says Kurt Berger, Technical Insights analyst. "These substances have a range of biological activities that include effects on blood pressure, blood platelet aggregation, inflammation and the immune system, and some may stimulate muscle contraction."
