why is it when you have a day off work and you stay in bed for longer your more tired when you wake up ?

Its because you're getting off of your 'schedule'. When you're going to bed and getting up at particular times every day you "internal clock" is set to those times. When you change the times on a day off your body gets disoriented and out of wack. We learned about this in a psychology class called "Brain and Behavior" so if you're really interested in the biology and psychology behind it I'd look in places like that.
i tend to be the oppisite, on my day off i wake up really really early and cant get back to sleep and wake up shattered at the normal time when im at work!
