Alcohol is a quick absorbing carbohydrate. The brain senses that there is too much carbohydrate (glucose) in the system, and although it enjoys it for a while, it yells for the production of insulin, to balance the sugars. The purpose of insulin is to open the "cell's mouths" to let food and water in.

If there is too much insulin (a condition known as hyperinsulinemia), it can result in there being too little blood glucose in the blood stream for the rest of the body to use during the day (a condition known as hypoglycemia). If the brain does not have enough sugar, it starts demanding it by any means possible, including hangover symptoms.

That is why "drinking the hair of the dog that bit you" is such an effective remedy. It quickly adds carbs (sugar) to the bloodstream to quiet down the brain's demands. Of course, it can lead to another hangover.
Alcohol depletes the other water and minerals in your body. Abstinence is great!
