Aaaah...the gallbladder removal can explain it, if you're talking about him having to have a bowel movement. If you're talking about him having to urinate, that's different altogether.
The function of our gallbladders is to hold bile (which is made by the liver) and release it as needed, a little at a time into the intestine (bile helps break down fat in food)...when the gallbladder is removed, the liver dumps bile directly into the intestine in large quantities. Bile is irritating to the intestine and can cause what's called a "gastro-colic" reflex. This is the reflex system that tells the colon to empty when food hits the stomach, or even in anticipation of a meal. It greatly increases peristalsis (the movement of stool through your intestines) and this will give you diarrhea within minutes of eating.
This is especially true if you eat a fatty meal (which triggers the release of bile).
Unfortunately, I know about this first-hand. I have the same "problem".
