Why dont we remember falling asleep?

good question!
it's because our memory banks are some of the first things to shut down, and our eyes (are supposed to) naturally close so we don't get all that unnecessary input and we can protect our eyes with our eyelids.
you use your memory every waking moment and it uses sleep time to recouperate and analyse the things you did during the day. your short term memory and your long term memory also take this time to swap notes and organise as well as prioritise memories, that's why sleep is so important while revising and it's also how cramming works so well during exam time: it's the sleep part that's important.
evolution has taught the brain that once we have found a safe place to sleep, it doesn't need to remember or even record information about our sleep because we still have touch smell and hearing which are sufficient to observe the environment while we're sleeping.
so it saves alot of energy and space but one of the upshots of this is that we don't-or we're not supposed to- remember the process of falling asleep: it's not useful and i some cases it can actually be dangerous.

it is because our body is so relaxed and our mind has stopped working for rest we tend not to remeber the process of falling off to sleep.
When the brain shuts off you cant remeber anything cos your brain isnt there to remember it

It's an unconscious state of mind. What always puzzles me is - after all that tossing & turning through the night, I'm still in exactly the same position as when I went to sleep!

This was not a question out of curiosity to people in some traditions for many centuries. People used to undergo austerities to become aware of their falling asleep. The next step is to watch yourself sleeping ! May sound incredible, but is regularly practised by quite a few. And with this the deeper perception levels beyond just the sense organs opens up. Life happens in a different dimension to such persons !
Even the attempt to remember falling asleep is not without rewards.. experience it, and do not just believe or disbelieve it.
