Why are you supposed to stay out of the sun after taking certain medications?

Because your skin will be more susceptible to burning. I know this from experience. I was on a certain prescription and went out in the sun for a walk, and burned badly just in an hour. I usually don't burn at all.

When I was taking an antibiotic for my skin condition the doctor stressed to stay away from the sun because the medication would make my skin more sensitive to the sun and it's harmful effects, in other words a bad sun burn.

Some medications will make you more susceptible to sunburn. Because some medications make you more sensitive to the sun. i.e. you sunburn faster, develop rashes, etc.
