We yawn because we need more oxygen, the wider our mouths are open, the more oxygen we can take in. Also, yawning is only 'infectious' because if people are in a room together, and one yawns, the others are likely to be breathing the same low oxygen air as the first one to yawn so they all do as they all need more oxygen. Its purely psychological when it happens over the phone or when u have seen someone on the television yawn- or maybe it has just reminded our brain that we are a little oxygen starved ourselves!
