The x-ray only eliminates injuries to bone, not to soft tissue wrapped around it. The vein in the finger may have been injured, causing it to bulge. It could also be swelling that has forced it closer to the surface, or putting pressure that is restricting blood flow. If you have concerns with it,you should go back to see the doctor. Likely they will just advise you take it easy using the hand until it heals itself, as long as overall blood supply in the finger looks good. Horse bites can do damage other than fractures, expecially if it were a grinding bite as opposed to a nip with just the front teeth.
You could have soft tissue damage that dosen't show up on x-rays. The muscle under the skin can tear and cause swelling and bruising. If this is causing you trouble, and depending on how long it's been since the bite, you should see your MD.
