The American diabetes Association is good, and there are many other web sites that have diabetic menus and recipes.
I just attended a diabetes education seminar at the local hospital, and they reccommend a full, healthy diet, with lots of vegetables and fruits, lean meats, and dairy, and grains. They recommend that the grains be stone ground, whole grains, and the bread and pasta be whole grain.
Whether you count diet exchanges, or grams, the seminar recommends one to two carbohydrate exchanges for breakfast, three to four for lunch, and two to three for supper. [A Carbohydrate exchange is 15 grams of carbohydrate.] Some people need less carbohydrate than others, but all diabetics must have some carbohydrate.
so for your guy, ask him what his exchanges are, and build your meals around those limits.

Type 2 Diabetics can eat anything and everything. The key part is control the amount of what your eating which i find very difficult at times. No matter what we eat it all turns to sugar or glucose. What a diabetic wants to do is control that sugar level in the blood (not having what we call "Spikes") very High or very low peaks in blood sugar levels which can be very dangerous. 2nd key food choice tiny piece of chocolate cake? or some nuts and carrots or a piece of fruit? Hmmm? even if your eating the healthy stuff you have to control the amount. If I over indulge which I do, I choose the healthy stuff. 3rd key EXERCISE!!!!! SEXERCISE IS WONDERFUL ALSO!! GIVE HIM PLENTY!!!!!!!!!!!!!!!!!!!!!!
Type 2 diabetics have some insulin production or something makes the insulin they do product not work properly. This type of diabetic needs to eat smaller amounts, avoid sugar and eat more often. This is so that the amount of sugar entering thier blood stream is kept within the range thier insulin productions can handle. It is also most important to exercise after eating to burn off sugar rather than have to store it. Any good balanced diet is appropriate and sweets are to be avoided or eaten if moderation.
Tghe American Diabetic association says a diabetic should use the same diet as a regular person. You know the 5 food groups. I mean a healthy food prymid diet. NOT the American Burger King Diet. They can have carbs and sugar ( Very important for cellular metabolism). If they do not have these in moderation it can cause a drop in blood glucose.
