What helps digest prime rib meat?

I was always tout that if you eat prime rib or any kind of red meat and drink a juice high in vitamin c that it helps digest the meat and enhances the digestive system. Don't know how true this is but I know whenever I have red meat I make sure that I also have something high in vitamin c.
