What would be a reason for waking up unable to breathe?

ER doctor diagnosed asthma but he was not wheezing he just literally could not breathe at all for almost a minute

there are possible causes here but remember this only guesswork: neurological, perhaps pressure on a nerve site, or respiratory center; then there might be soft tissue obstruction, like a overly relaxed tongue blocking your airway; or maybe a phrenic nerve problem causing brief paralysis of the diaphragm; and just generally sleep apnea from anxiety issues.
again keep in mind this only guesswork, some of which a specialist could rule out immediately, and some by simple sleep study testing.
if all you are having is the symptom of waking up abruptly and feeling like you cant breath then i'd say you probably have no underlying disease issue at all, but some behavior issue, or perhaps physical involvement.
try visiting a doctor (pumonologist, or neurologist) who is certified in sleep study and see what they have to say.

It definitely sounds like sleep apnea. Another cause could be acid reflux. If I have it during the night, I wake up and cannot get by breath. Do you ever wake up with an acid taste in your mouth?
