I think you mean botulism.
There is an organism called Clostridium botulinum, commonly found in dirt, that produces a lethal toxin. The organism, because it can forms spores, can survive temperatures that most other bacteria cannot. If sufficiently high temperatures to kill the spores are not reached during the canning process, the organism can survive. Later, after the canned goods are cooled down, the organism can "hatch out" from its spore form and grow, producing its toxin. The toxin is a protein-based molecule, so it can be destroyed by boiling the food for about 10 minutes. However, if the toxin is not destroyed and a person consumes the food, he can die. The toxin paralyzes the person so that he can't breathe.
This is the same toxin used in Botox. When Botox in injected into the forehead, it paralyzes the muscles and prevents the person from frowning and showing wrinkles.
