The blind person knows where they want to go and using landmarks, signs let's them know where they are and "guides" the dog with the harness which direction to go.

They memorise the street maps
It doesn't..Its the owner who knows the route...The guide dog merely assists the owner in avoiding obstructions, and assists in crossing the road...It doesn't know one bus or train from another...they are good, but not that good.Over time it may learn a regular route, but the owner directs it either with voice commands or tugs on the harness.
It's not blind.
