Its probably a combination of water weight and constipation thats causing both. As for the actual weight, weigh yourself at the same time every time, like first thing in the morning before you eat breakfast, you get more consistant numbers. Try not to weigh yourself everyday, it'll drive you nuts. Do it about once a week. Congrats on quitting smoking!
