What are the best back exercises for a ripped looking back?

As a former bodybuilder there isn't a whole lot you can do to get "ripped"..

Sure, lower weights coupled with higher reps will do some but overall bodyfat loss it really the only way to start the "cutting" that you desire.

Weighted hyper extensions, Dead Lifts, Bent rows, pull ups etc are great back builders though to answer your question.
