There are so many options and muscle groups, they can't all possibly be explained in one email. I would suggest picking up a couple issues of Muscle and Fitness. They always give a lot of techniques that can be used for dumbbells, barbells, or cables.

You'll want to work with heavier weights and lower repetitions (6-8). If you haven't worked out before I recommend getting ahold of some good books first. Arnold Schwartzenneger's Body Buliding Encyclopedia has some great information and pictures. It's also very important to make sure you eat the right amounts of proteins, etc. Again, there are a lot of good books out there that you can buy on-line.
