Remember to eat small snacks and not big meals. Also remember to excercise for 15 minutes EVERY day. It only takes a little bit and you'll keep your weight down.
On the days that you are not working, be active. Make sure you boost up your length of your excercise a little on off days too. Don't change your eating habits on your off days and eat small meals/snacks.
Stay away from Starbucks and diet drinks; aspertame actually boosts your appetite and makes you eat more. Remember that Jamba Juice and Starbucks products have a TON of calories. Stay away from the vending machines at work if they have them. Junk food will give you quick, short acting energy that will fade fast.
SLEEP is one of the most important things you need to do. Very important. Keep a regular sleeping schedule on your off days, and don't plan many social things the days your working. Set up social things in advance so you also have things to look forward to because you might miss out on some stuff that's going on.
Make sure your friends and family understand your hours and are supportive of it. Some people forget you have unique hours and they dont' realize that you may be dragging a little at times or may be a little irritable and out of sorts.

i wish i only worked 12 hours a day...i eat around 9pm, again around midnight-ish, and breakfast at 545am. there's some tuna thrown in there around 2 am. i work out every morning when i get off of work (whenever that is) and do weights first, then cardio. usually your first meal of the day should be the least healthiest in most cases. that's b/c you have all day to burn off what you ate. then progressively cut your carbs/fat intake throughout the day. the last meal for me is breakfast, and is all carbs. this is because it;s at least 3-4 hours until i can workout, and i'm still up for a few hours after the gym so i know that i'm burning all of that off before i go to bed. never eat anything 2-3 horus before you go to sleep b/c it will mess up your metoblism. never go to bed hungry either b/c of the same reason. good luck.
You have to really be prepared- Make all your meals on your 'weekend' and freeze them in tupperware.
Cut up lots of fruits and veggies to pack as snacks and side dishes throughout the week. Other healthy snacks to have on hand are: dried fruit, trail mix, pickles and raisins.
Take a multivitamin.
If your job isn't physical, then try walking during your 10 or 15 minute breaks (you should get those at least!). Incorporate exercise into your weekend by going on bike rides or taking hikes. If you can ride your bike to work, that might be another way to get some exercise in.
