Any 'safe' or low cal salads in Italy?

You can easily find different kind of salad in any restaurant. If you're never been in Italy, remember the more common salads are light, like the dressing as well (generally little oil and vinegar or lemon).
Furthermore, often salds *are* served without dressing and you have oil and vinegar in small bottles on your table!
As for cheese... if you mean "in the salad", well, generally you have to ask for it if *you want* it, since most Italian salads are 100% vegetals or with things like tuna; cheese is used more rarely, and often is mozzarella (which is light).
For any specific request you may have, just ask the waiter: if they can satisfy your needs, for sure they'll do!
