First, you're exercising backwards. Do your weights FIRST, then cardio. You'll have more energy to lift weights, and your metabolism and hormones will increase to make your cardio more effective.
Secondly, eat immediately after you exercise (not before) while your metabolism is still up there. High protein, low fat. A small, lean-meat steak or roasted chicken breast, salad (more veggies than lettuce) with fat free, low calorie dressing (try vinegar, garlic, salt, and pepper), a small apple, and a BIG glass of water.

Low fat, of course, and low-carb if you want to put on muscle. South Beach is good idea for what you are looking for, as far as diet plans, but I would just use it as a guide to teach you what you should eat.
do your weights first then your cardio. you will burn more fat this way. after your workout you want to take in some simple carbs followed by protein. drink a cup of juice then 10 minutes later have a protein shake. never eat anything with fat after your workout. wait 2 hours after you workout to eat anything with fat in it. the fat will go right to storage if you do.
