In the evening, you have eaten 3 meals and however many snacks you had through out the day. It doesnt matter how healthy these are, its still food inside your stomach =D

The body weighs more at night than it does in the morning because everything is tired and kind of dragging, almost like dead weight. In the morning, your body is awake and fresh and so this makes it the best time of day to weigh yourself. Not only should you weigh yourself in the morning but you should also weigh yourself at the same time everyday.
It doesn't have anything to do with what you are eating. When you eat a meal, it takes 45 minutes for it to digest far enough to show a weight difference on the scale. And if you are eating moderate amounts of food, say fruit for breakfast, it has already metabolized and is gone from your body by nighttime.
A person weighs more at night because of gravity and the fact that you eat. You are also shorter at night because gravity pulls toward the ground all day.
