I have seen one, and have information on it, entitled, "What Would Jesus Eat?" which is similar, I think, to the Medeterranian Diet. The basis of it looks at what Jesus might have eaten during his life on Earth given the time period in which he was here. The parish nurse at one of the churches I've been active in did a seminar on it one Sunday during the Sunday school hour and I recently found the information on it. However, it has gotten misplaced and likely packed somewhere. (My husband and I are in the midst of preparing for a move.)
Personally, I became a vegetarian, eventually vegan, as I looked at the animial/meat industry and what it was doing not only to the animals, but to the world. Personally, I couldn't call myself a Christian and in good conscious support that. Eventually, my diet became even more whole foods to the point that I'm even doing organic when I can.
Somewhere, I have more information on Christianity and vegetarianism, and similar topics, but it's almost time for church and I should leave. I will try and come back later to extend my answer.
