Chances are that any fluctuation in weight is either food waste yet to be "disposed" of, or water weight from retention due to the activity.
Truth be told, and I hate to give a slightly negative answer here, is that with that routine, you are not likely to see any significant weight loss any time soon. Your diet seems to be ok, so long as you're not over doing it on sodium, sodium can cause water retention in high doses. As for the walking, you should change to power walking and increase the distance by at least another mile if not two.
Weight loss by cardio is almost as simple as balancing your checkbook in reverse. You must have more calories being burned than the amount of calories you take in each day, simple and easy. I hope this helps in some fashion or another. =]

most people will gain 10 pounds of muscle if they train hard and eat right. i doubt your gaining muscle that quickly. dont go by the scale. take weigh yourself more than once a week. the weight will come off, give it time. the walking inst gonna do much for fat loss. you have to focus on your diet. watch your calories and avoid junk food. keep your calories around 1500 a day and you will lose the weight.
When you lose and exercise it turns to muscle.
well of cource you will be gaing mucle but just think and relize your loosing fat keep your weighing scale in a box now intil your achivement goal day comes youll be measureing your inches exercize so it isnt too hard for you (they proved when working to hard you burn less calories then a person doing a good amount of exercize ) hope i helped
