How come if starving yourself slows down your metabolism and makes you gain weight, then why are anorexic people so skinny?

Because eventually your body comes out of that starvation mode and starts eating the fat and muscle in your body for fuel.

Starvation mode is usually not as extreme as people make it out to be. Also, starving yourself doesn't make you gain weight, it just makes it a little harder to lose.

A 60 calorie apple a day plus exercise (a somewhat typical anorexic day) will do that. However what you don't see is how their anorexia destroys their insides (organs). Same with the hair loss (hats and wigs take care of that). Looking thin isn't worth dying for.
They are getting many calories at all, Diet in general are not good. You may want to focus on your health more so than your weight.
