Question:
how is calorie content measured in food. i.e take a piece of steak, how did they first measure how many calories is in say a 8oz rump

Answers:
The general process is to take the food to the lab and measure the amount of macronutrients (grams of protein, carbohydrates and fats). The amount of calories is then figured using these numbers:
(fat g x 9) + (carb g x 4) + (protein g x 4) = calories
The end is actually kilocalories (kCals), but in everyday speach, we drop the k part.

8oz rump steak will have numbers similar to:
around 350 calories total, 150 from fat, 8 from carbs, &186 from protein. Of course, it will depend on how it is prepared as well.
Calorie content means the amount of energy it contains the best way to measure this is to burn it and measure how much energy is produced this can be found from the temperature rise in an isolated chamber or by the amount of energy required to maintain a constant temperature. the unit of energy is the Joule this is then converted to calories for food.

One thing though not all food is converted to energy in the body the total calorie count is not what you will get but this doesn't really matter from a dietary intake point of view you should still follow the recommended amounts. You can work out how much energy is produced per calorie for a human body or so I have been told but I don't really know how this is done
