What can I have for breakfast?


Question:
As a working mum I find I don't have the time for a cooked breakfast (or to cook anything) and couldn't face it so early anyway. I don't like milk so cereals are out. Any suggestions for something that should keep me going till lunchtime. I get up at seven and have to leave at eight.

Answers:
I like oatmeal, yogurt, granola bars, bananas, frozen waffles... There are also frozen breakfast pockets and such that you can pop in the microwave.

soak porridge oats in water in fridge overnight

add a drop of honey and eat in morning

oats are slow release carolhydrates so keep you full til lunchtime
Bananas are a great meal replacement on the run, or you could try making or buying bircher muesli.


Bircher Muesli

recipe provided by Annerley "Bed & Breakfast" in Brisbane

(HEC staff stayed at this lovely hotel this year and we devoured this delicious muesli for breakfast during our stay)

1 cup instant rolled oats
1 cup low fat vanilla yoghurt
1 cup of your favourite fruit juice (e.g apple juice) (add an extra 1/2 cup juice for a thinner mixture)
1/2 cup extra light cream
1/4 cup shredded coconut
1/4 cup flaked almonds

Method:

Mix all ingredients together in a bowl and place in fridge overnight. Serve the next morning. This mixture keeps well for 3-4 days (if it lasts for that long).

Serve with stewed rhubarb (6 stalks of chopped rhubarb, 1/4 cup water and 1 cup sugar - bring to boil in a pot, stir to avoid sticking and cook for 10 minutes or until soft).

If you are time poor in the mornings prepare breakfast the night before.
smoothies , berries, banana, yogurt, wheat germ, orange juice, you name it you create it you drink it get healthy have lots of energy.
Dry cereal? I do it all the time.
Scrambled egg on yoast,, 3minutes in microwave,,,
I like baked beans on toast (wholemeal or multigrain) plus a piece of fruit and maybe a cup of de-caf coffee. It makes a very nice breakfast and is good for you too. It only takes a few minutes to heat beans and do the toast.
fruit juice or a smoothie are meant to be great for waking you up in the morning.

cereal bars are also quick to grab and eat

a bagel with jam or cheese can also be nice, toasted or just plain

you can get pancakes in wrappers that you can pop in the microwave for 10 seconds, they can have a strawberry/chocolate filling

also pop tarts are another idea if you have a sweet tooth, they come in chocolate, strawberry or marshmallow flavours

crossiants can be quickly microwaved, could add butter/ham/cheese

also malt-loaf is something easy to grab and eat as well!!
A hot cross bun or muffin, yoghurt and fruit
I like those Sara Lee Cinnamon swirl breads (they have different flavors and stuff) but you can just throw them in the toaster and I like to spread little butter on them and there ya go (not as boring as toast). You could also always do bagels.
Scrambled eggs on toast. They only take 2 mins in a microwave, so I don't think that classes as cooking!!
mash up half an advacado and have it in toast, add some humous if you like it, when you do have some time try mashed up advacadoe, humous & bacon in pitta bread.
