How long would it take me to get from a size 7 in jeans to a size 5?

What kind of exercises can i do?

depends on your approach.
changing your diet=1 month
doing cardio=2-3 months
Depends on your hips and how often you can work out!
Change your diet to eating under 1500 calories a day.

Why do you want be fit into a size 5 jean, and why are your "things" (I think you mean "thighs") your main focus? Exercise builds muscle and muscle mean size; granted its "toned" size not flabby flesh, but size just the same and not likely to reduce the size of your thighs.

Ask yourself some questions about your overall health then examine how much your image is a reflection of that versus some plastic ideal laid upon you by the media.

Introspection may benefit you far more than an arbitrary measurement of 5 or 7.
