Right - there is NOTHING wrong with snacking. Get some low fat yoghurt, handful of nuts / raisins, dried fruit / normal fruit, carrot sticks.
Your first realisation is the the GI diet is bad. Anything called a "diet" is bad. Why? Because a diet is short term. Changing your eating habits it long term!
For instance - don't eat white carbs. Avoid white rice, white bread, white pasta etc. Opt for wholewheat - check that whatever "wholewheat" that you are buying is 100%.
Always eat breakfast!! Not something massively huge and fattening though - just a bowl of cereal, boiled eggs are awesome too, slice of toast etc. Try having your main meal during the day (after having small, light snacks between meals) and have a smaller meal at dinner.
Remember that its better to eat 6 small meals a day than 2 /3 big ones. Also remember that waiting until you are hungry, or skipping meals is worse than over eating. Your body will go into "starve mode" and as soon as you eat again, it will assume that it isn't going to get food for a while, so everything is stored instead of burnt off.
If you do a bit of exercise and watch the amount of FAT you are eating (try keep it between 30 - 35grams per day). Calorie counting is all well and good - but foods may be high in calorie and low in fat. This means that your body won't store the food as fat, rather, it will be stored as energy.
Last thing - easiest way to exercise and lose HEAPS of weight is interval running. Take 20mins three times a week AT LEAST. Go for a run, varying your speeds. Start at a walk, increase the speed every minute until you are running as fast as you can for 1 minute. slow it down again and then build it up to run as fast as you can again. always end up with walking for a minute and remember to warm down!!

Nope its bad for you it leads to malutrition and as soon as you eat any carbohydrate all the weight pounds itself on. There is no way to loose weight quickly the only safe way to diet is to calorie count (to a recomended amount not a silly amount like 500 a day and with all the fruit and veg you need a day)
Calorie counting is a very effective weight loss method because, unlike following a proprietary diet plan, it helps you to learn real facts about real food and what your body really needs. So when you calorie count your way to your weight loss goal you're much better equipped to maintain your new weight.
The average woman needs 2000 calories a day (varies with lifestyle) so you want to eat 1500 calores a day ... To lose 1lb a week, you need to eat 500 calories less than you use each day. I don't advise you do any less than 1000 or even 1250 or you will become very ill
