If all i ate was fiber one and fruit could i eat it all day without calorie counting?

No. Not only would you not get enough protein, but if you eat too much fiber, it will leach vitamins out of your body. Also, it really doesn't matter where a calorie comes from, if you eat too many calories you will gain weight. Even if those calories are from fruit.
