why do we have ridges on the roof of our mouths? what are they called?

As Dr Sam correctly says above, they are called palatal rugae (pronounced ROO-GAY).
I don't have a researched answer, but my guess is that it helps break up the food during eating when your tongue crushes food against the roof of your mouth.
They are "rugae" and they are probably there for added padding and insulation. I'm sure someone will give you a more scientific explanation, but this makes sense to me.
