I have had veneers for 25 years, several sets in fact, and I know that some people do have sensitivity problems. I did not have that problem.
It is extremely rare for a veneer to just fall off. Is your dentist experienced in cosmetic dentistry? It can happen, but it truly is so rare that it is almost non-existent.
I have porcelain veneers. Since they are extremely expensive, I am careful not to do foolish things with my mouth and teeth, but there aren't any "forbidden" foods.
If I were you, I would go see another experienced dentist and get their opinion and perhaps some touch-up work done.
Two weeks isn't very long. The sensitivity should settle down eventually and should no longer "ruin your life". Until you get in to see the dentist, you can use a temporary dental adhesive sold at most pharmacies.
Try drinking your cold beverages through a straw for now.
