how long does it take cavities to form? Is it 6 months because thats when you have check-ups?

I started going to a new dentist after I moved to a new state, and they are way more high-tech than my old one. They do digital x-rays, and they told me that I had a cavity forming and they zoomed in to show me. It stayed like that for about 3 checkups until the 4th one they said it would need filled. It was kind of neat because they spotted it early and with brushing, flossing, and lots of flouride mouthwash, it stalled the decay for, well, I guess two years? Pretty cool if you ask me! But my old dentist, I would have no cavities and then next check-up I'd have one, so I guess a lot of it depends on identifying it and the care you take with it? Just speculating!
