The gauze may have been a piece of material called gel-foam, which could have been placed to help the clot form. If so, it would not need to be removed by a dentist. However, if it was a medicated gauze, like Nu-gauze, which is placed to help a dry socket heal, it should have been removed after one or two days.

Yeah it's supposed to. it's weird however that he didn't tell you. do you have to go back for a check? that's normally when he would remove it. How long ago did you have the teeth extracted? Were you supposed to go back in for a check up? Call the office to confirm what you post op care instructions are and when you need to be seen again!
When they pull out your wisdom teeth they have to keep the blood in there to plug the hole. The blood will harden after a while.
If you can feel air flow thru there something is wrong, or if its bleeding. If it isn't bleeding and you can't feel air, then nothings wrong. Just remember to clean it. You might want to call your Dentist and find out. If they left something in there they should have let you know.
