Hi there! It really depends on how much trouble they had to get the teeth out. My jaw was immobile for a week, however my brother was right in a day or two.
I will add that even though I couldn't open my mouth I wasn't in pain (whereas my brother was).
If you are having pain I do suggest dissolving pain relief as that works really quickly.

It took about 4 days to get the stitches to start falling out, so pretty much a week. It all depends whether or not you get stitches (sometimes people don't get them), and how much pain you have after the surgery. I was fine though after the first day (no pain), I just couldn't open my mouth all the way.

Everyone is different.
Some extractions can be difficult and cause more trauma. When there is more trauma to the surgical site, then you will have more consequences - soreness, pain, swelling, etc.
