I didn't have a Herbst, but I did have a plastic expander, which prevented my teeth from coming together in the front. The things I learned to make it easier are:
1. Drink a lot of smoothies/soup. Soup at Hand is a really good thing for this, I wish they had had it when I had my palate expander!
2. Don't try to eat things you have to bite into. Tear things into small pieces so that you can chew them with your back teeth. Trying to eat sandwiches or burgers is just frustrating unless you cut/tear things into bite-sized pieces.
3. If you work at it, you can sort of chew on your front teeth by using your tongue to push food up instead of your bottom teeth. It takes practice, but it will work to some extent. I did this a lot at first because the back teeth felt weird with plastic over them.
4. Water piks are AMAZING. They cost about $30 and you can get them at the pharmacy, I think. It squirts a stream of water like at the dentist, and it helps you get all of that food out of your dental work afterwards. It can even spray up between your palate expander and the roof of your mouth.
