One of my stitches came out 5 days after my wisdom teeth came out. Was that suppose to happen?

It is normal. Even the ones not yet out will feel like they have strings hanging if you touch them with your tongue.
I think it is probably fine, but call your oral surgeon just to be sure.

Big question: Is it bleeding? Mine were those self-dissolving stitches, so i didn't worry too much when i saw that a couple were gone shortly after the procedure. If you're not in pain and you're not bleeding (and there's no pus), then wait til Monday to call the oral surgeon who did it. Otherwise, call asap--the doc should have an answering service that send a page. Hope all turns out well! It was a blessing for me to have mine out!
